Summer Cherry & Burrata Salad

Seasonal ingredients and light, fresh flavors come together in this easy summer salad recipe. Use a base of mixed greens, or another greens option of your choice such as arugula or spinach. Toss the greens with balsamic vinegar and olive oil and add mix-ins like chopped fresh cherries, cucumber, and chopped hazelnuts. Top it all off with creamy burrata cheese for the ultimate summertime lunch or addition to an al fresco dinner.

Ingredients

  • 3 cups mixed greens
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup cup diced cucumber
  • 1/4 cup cup hazelnuts, chopped
  • 4 ounces burrata cheese
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 1/4 cup dried cherries
  • Salt and pepper, to taste

Instructions

  • In a serving bowl, add the mixed greens, cherries, cucumber, and chopped hazelnuts. Add the olive oil, balsamic vinegar, salt, and pepper and toss to combine.
  • Top with burrata cheese and serve.
