Cherry Cottage Cheese Muffins

Cottage cheese brings extra protein to any dish, and it plays a key role in these cherry cottage cheese muffins. A sweeter, heartier spin on egg bites, this easy breakfast can be prepped ahead for quick on-the-go meals or a lazy Sunday morning. They’re soft, fluffy, and packed with flavor thanks to juicy Northwest cherries.

Ingredients

Muffins

  • 1 1/4 cups cottage cheese
  • 3 Large eggs
  • 1 1/4 cups rolled oats
  • 1/4 cup milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped fresh cherries

Instructions

  • Preheat the oven to 350 degrees. Grease a muffin pan with cooking spray.
  • In a large mixing bowl, whisk together the cottage cheese, eggs, rolled oats, milk, maple syrup, and vanilla. Stir in the chopped cherries.
  • Divide the mixture amongst the muffin pan wells, filling each 3/4 full. Bake for 28 to 30 minutes until set and the edges are lightly golden. Let sit in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Store in an airtight container in the fridge for up to five day.
