Cherry Chocolate Chip Pancakes

Nothing beats a slow Sunday morning at home. Make it even better with a hearty breakfast. You can make pancakes from scratch with just a few ingredients from the fridge and pantry. Elevate them further with the addition of thawed frozen cherries and mini chocolate chips for an extra pop of sweetness. Enjoy them on their own or dress up the perfect stack with all of your favorite toppings.

Ingredients

Muffins

  • 1 1/2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 1 1/4 cups milk
  • 2 tbsp canola oil
  • 1 cup frozen cherries, thawed
  • 3/4 cup mini chocolate chips

Instructions

  • In a medium bowl, mash the thawed frozen cherries with a fork.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Stir in the egg, milk, and oil. Stir in the mashed cherries and chocolate chips.
  • Heat a pan over medium heat and grease with butter or cooking spray. Use a 1/3 cup measuring cup to scoop the batter into the hot pan, making one to two pancakes at a time. Cook the pancakes for two minutes on each side until golden.
  • Serve with maple syrup, additional thawed cherries, chocolate chips, or whipped cream.
