In a medium bowl, mash the thawed frozen cherries with a fork.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Stir in the egg, milk, and oil. Stir in the mashed cherries and chocolate chips.
Heat a pan over medium heat and grease with butter or cooking spray. Use a 1/3 cup measuring cup to scoop the batter into the hot pan, making one to two pancakes at a time. Cook the pancakes for two minutes on each side until golden.
Serve with maple syrup, additional thawed cherries, chocolate chips, or whipped cream.
