Cherry Turnovers (Air Fryer)

Ingredients

  • 1 package 2 sheets puff pastry, thawed overnight in the fridge

For the Cherry Filling

  • 1 lb fresh cherries pitted
  • 1 tbsp zero-calorie sweetener
  • 1 tbsp cornstarch
  • 1 tbsp water just a splash to help combine
  • 1 egg beaten (for egg wash)

For the Glaze

  • ½ cup powdered sugar
  • 2 tbsp heavy whipping cream
  • ¼ tsp vanilla or almond extract

Instructions

Step 1: Make the Cherry Filling

  • In a medium saucepan, combine the pitted cherries, Purecane sweetener, cornstarch, and a splash of water.
  • Cook over medium heat, stirring occasionally, until the cherries break down slightly and the mixture simmers and thickens into a glossy, pie-like filling.
  • Remove from heat and allow the filling to cool for at least 10 minutes before assembling. (Crucial step so the hot filling doesn’t melt the butter in your pastry!)

Step 2: Assemble the Turnovers

  • Unroll your thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into 4 equal squares, giving you 8 squares total.
  • Place 1 to 2 tablespoons of the cooled cherry filling into the center of each square.
  • Fold the pastry over diagonally to form a triangle.
  • Use the tines of a fork to firmly crimp and seal the edges together.
  • Cut a tiny slit in the top of each turnover to let steam escape, and brush the tops lightly with the beaten egg wash.

Step 3: Choose Your Bake Method

  • Air Fryer Method: Arrange the turnovers in a single layer in your air fryer basket (work in batches if needed). Bake at 350°F for 12 minutes, or until puffed and golden brown.
  • Oven Method: Preheat your oven to 400°F. Place the turnovers on a parchment-lined baking sheet and bake for about 25 minutes, until beautifully golden and flaky.

Step 4: Glaze and Serve

  • While the turnovers cool slightly, whisk together the powdered sugar, heavy whipping cream, and almond extract in a small bowl until completely smooth.
  • Drizzle the glaze generously over the warm turnovers. Serve immediately and enjoy!
