Cherry Chocolate Chip Hazelnut Bars

Cookie meets granola bar in this easy bar recipe. Northwest Cherries and Oregon Hazelnuts are the perfect pairing for incredible flavor, with a few mini chocolate chips in the mix to enhance taste even further. Whip up a batch for the ultimate summertime snack, whether you’re hosting a backyard barbecue or heading to the lake.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped fresh cherries
  • 3/4 cup chopped hazelnuts cut in pieces
  • 3/4 cup mini chocolate chips

Instructions

  • Preheat the oven to 350 degrees. Line a square baking pan with two slings of parchment paper and grease it with cooking spray.
  • In a bowl with a hand mixer or the bowl of stand mixer, cream the butter and sugars until light and fluffy. Mix in the egg and vanilla extract.
  • In a medium bowl, combine the flour, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the creamed mixture. Mix in 1/2 cup chopped hazelnuts and 1/2 cup mini chocolate chips, reserving the rest for topping.
  • Fold in the chopped cherries. Press the dough into the prepared baking sheet. Sprinkle with remaining chopped hazelnuts and mini chocolate chips.
  • Bake for 35 minutes until golden brown. Let cool completely in the pan before removing and cutting into bars.
