Savory Cherry Sauce

1 cup Northwest fresh sweet cherries, pitted
4 tablespoons water, divided
1/4 cup dry red wine
3 tablespoons honey
2 tablespoons red wine vinegar
1 teaspoon fresh thyme leaves
1/2 teaspoon dry mustard
salt to taste
2 teaspoons cornstarch

Yield: 1 1/4 cups

Combine cherries, 3 tablespoons water and all remaining ingredients, except cornstarch. Cover and simmer gently 10 minutes. Combine cornstarch and remaining water; stir into cherry mixture. Cook and stir until mixture thickens; simmer 1 minute.
 
Serving Tip: Serve with fish or poultry.
